  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup Italian-style breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 1 cup marinara sauce (store-bought or homemade)
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut chicken breasts into bite-sized pieces (about two bites each).
  3. In one bowl, whisk eggs until frothy. In another bowl, mix breadcrumbs and half of the grated Parmesan cheese.
  4. Dip each chicken piece in the egg mixture, then coat with breadcrumbs and place on the prepared baking sheet.
  5. Bake for 15-20 minutes until golden brown and internal temperature reaches 165°F (75°C).
  6. Remove from oven, sprinkle mozzarella on top, and return to bake for an additional 3-5 minutes until melted.
