Ingredients

- 1 cup Italian-style breadcrumbs

- 2 large eggs

- ¼ cup chopped fresh basil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut chicken breasts into bite-sized pieces (about two bites each).
- In one bowl, whisk eggs until frothy. In another bowl, mix breadcrumbs and half of the grated Parmesan cheese.
- Dip each chicken piece in the egg mixture, then coat with breadcrumbs and place on the prepared baking sheet.
- Bake for 15-20 minutes until golden brown and internal temperature reaches 165°F (75°C).
- Remove from oven, sprinkle mozzarella on top, and return to bake for an additional 3-5 minutes until melted.
