Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh cremini or button mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  3. In the same skillet, add chopped mushrooms and remaining garlic. Sauté until softened and golden brown, about 5 minutes.
  4. Pour in heavy cream and chicken broth; stir to combine while scraping up bits from the bottom of the pan.
  5. Return chicken to the skillet; let simmer for about 10 minutes until cooked through and coated in sauce.
  6. Plate over rice or pasta, garnishing with fresh parsley if desired.
