Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • 2 cups fresh spinach
  • 3 garlic cloves (minced)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear chicken for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet.
  2. 2. In the same skillet, sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant.
  3. 3. Add chicken broth (or water) and orzo pasta to the skillet; bring to a gentle boil while scraping up flavorful bits from the pan.
  4. 4. Reduce heat to low, stir in heavy cream and Parmesan cheese, simmering for about 5 minutes until combined.
  5. 5. Fold in fresh spinach until wilted; slice cooked chicken and return it to the pan. Mix well and serve hot.
