Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup sun-dried tomatoes (oil-packed)
  • 3 cups fresh spinach
  • 1 cup heavy cream

  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic and sun-dried tomatoes until fragrant (about 1-2 minutes).
  4. Pour in heavy cream and sprinkle Italian seasoning; stir to combine and simmer for 3-5 minutes until slightly thickened.
  5. Add spinach until wilted, then fold in Parmesan cheese until melted.
  6. Return the chicken to the skillet, coating it in the creamy sauce. Allow to mingle for another couple of minutes before serving.

Keywords: For extra flavor, consider adding fresh basil or replacing spinach with kale. A splash of lemon juice can brighten the dish. Leftovers can be stored in an airtight container for up to three days; reheat gently to maintain creaminess.
