  • 1 cup red lentils
  • 4 cups fresh spinach, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 teaspoon cumin seeds
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2 medium tomatoes, chopped (or 1 can)
  • 2 tablespoons cooking oil or ghee
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse red lentils under cold water until the water runs clear.
  2. In a large pot, heat oil or ghee over medium heat. Sauté onions for about 5 minutes until golden brown.
  3. Add minced garlic and ginger; cook for about 1 minute until fragrant.
  4. Stir in cumin seeds and turmeric, then add chopped tomatoes. Cook until tomatoes soften (about 3-4 minutes).
  5. Pour in the washed lentils and add 4 cups of water. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes until lentils are tender.
  6. Stir in fresh spinach and garam masala; adjust seasoning with salt if necessary.
  7. Serve hot, garnished with fresh cilantro.
