Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 3/4 cup cold water
  • 1 cup ground chicken or pork (or tofu)
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup mixed vegetables (carrots, bok choy, mushrooms)
  • 2 tbsp soy sauce (low-sodium preferred)
  • 1 tsp sesame oil

Instructions

  1. In a large bowl, mix flour and salt. Gradually add cold water while stirring until a smooth dough forms. Knead gently for about 5 minutes until elastic.
  2. In another bowl, combine ground meat with green onions, garlic, soy sauce, and sesame oil. Adjust seasoning to taste.
  3. Roll small pieces of dough into circles (~3 inches wide). Place a teaspoon of filling in each circle, fold over, and pinch to seal.
  4. In a pot over medium heat, bring chicken broth and sliced vegetables to a gentle boil.
  5. Drop in dumplings once the broth is bubbling; cook for 8–10 minutes or until they float.
  6. Stir in additional soy sauce and sesame oil before serving. Garnish with green onions if desired.
