  • 6 cups fresh romaine lettuce, chopped

  • Β½ cup Caesar dressing
  • 1 cup croutons
  • 2 tbsp olive oil
  • Juice of 1 lemon

Instructions

  1. Marinate chicken breasts in olive oil and lemon juice for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill chicken for 6-7 minutes on each side until cooked through (internal temperature of 165Β°F).
  3. While chicken rests, chop romaine lettuce into bite-sized pieces.
  4. (Optional) For homemade dressing: whisk together garlic, anchovy paste, lemon juice, Dijon mustard, olive oil, and Parmesan cheese until smooth.
  5. In a large bowl, combine chopped romaine, sliced grilled chicken, croutons, and Parmesan cheese. Drizzle with dressing and toss well.
