Ingredients

Scale
  • 4 bell peppers (red, yellow, or green)
  • 1 lb lean ground turkey
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice (white or brown)
  • 1 cup tomato sauce
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
  2. In a skillet over medium heat, add olive oil and sauté the chopped onion until golden. Add the minced garlic and cook for another minute.
  3. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until no longer pink (about 5-7 minutes).
  4. Stir in the cooked rice, tomato sauce, oregano, cumin, paprika, salt, and pepper. Simmer until heated through.
  5. Stuff each bell pepper generously with the turkey mixture. Top with shredded cheese if desired.
  6. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
