Ingredients

Scale
  • 34 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup brown rice
  • 2 cups water
  • 2 medium ears of fresh corn
  • 1 poblano pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and marinating with cumin, paprika, salt, and pepper for at least 30 minutes.
  2. Cook the brown rice: In a medium pot, bring 2 cups of water to a boil. Add rice, reduce heat to low, cover, and simmer for about 45 minutes until tender.
  3. Heat olive oil in a skillet over medium heat. Sauté marinated chicken until golden brown (6-8 minutes). Add diced poblano pepper and cook until tender (3-4 minutes).
  4. Grill or roast corn on high heat until charred (about 10 minutes). Remove kernels from cobs.
  5. Assemble each bowl with a scoop of brown rice topped with sautéed chicken, poblano mix, grilled corn, fresh cilantro, and a squeeze of lime juice.
