Ingredients

Scale
  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, rinsed
  • 3 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup medium salsa
  • 1 cup chopped bell peppers (red and green)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 4 green onions, sliced

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a large baking dish.
  2. In a skillet over medium heat, sauté chopped bell peppers until tender (about 5 minutes).
  3. Add ground beef to the skillet; cook until browned, breaking it up with a spatula. Drain excess grease if needed.
  4. Stir in black beans, cumin, and chili powder; simmer for 3 minutes.
  5. Layer half of the tortilla chips in the baking dish, followed by half of the meat mixture and half of the shredded cheese. Repeat layers until all ingredients are used.
  6. Cover with foil (shiny side down) and bake for 20 minutes. Remove foil for the last 10 minutes to achieve golden cheese perfection.
