Ingredients

  • 8 oz spaghetti or penne pasta
  • 2 cups fresh basil leaves
  • 1/3 cup pine nuts (raw or lightly toasted)
  • 2 garlic cloves (fresh)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, following package instructions. Drain and reserve some pasta water.
  2. In a food processor, combine basil, pine nuts, garlic, and Parmesan. Pulse until coarsely chopped.
  3. With the processor running, slowly drizzle in olive oil until smooth.
  4. Add lemon juice and season with salt and pepper to taste.
  5. Toss the drained pasta with the pesto sauce in a large bowl. If needed, add reserved pasta water to achieve desired consistency.
  6. Serve topped with additional Parmesan if desired.
