Instructions

- In another bowl, mix the pumpkin puree, sugar, eggs, vegetable oil (or melted butter), and vanilla extract until smooth.

- Beat the softened cream cheese in a separate bowl until smooth. Drop spoonfuls of cream cheese into each muffin cup along with the batter for swirling.
- Bake for 20–25 minutes or until a toothpick comes out clean from the center. Let cool in the pan for 5 minutes before transferring to wire racks.
