Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and ginger.
  3. In another bowl, mix the pumpkin puree, sugar, eggs, vegetable oil (or melted butter), and vanilla extract until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Beat the softened cream cheese in a separate bowl until smooth. Drop spoonfuls of cream cheese into each muffin cup along with the batter for swirling.
  6. Bake for 20–25 minutes or until a toothpick comes out clean from the center. Let cool in the pan for 5 minutes before transferring to wire racks.
