  • 2 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 medium onions, sliced
  • 2 cups low-sodium beef broth

Instructions

  1. Remove the chuck roast from packaging and let it sit at room temperature for 30 minutes.
  2. Pat the roast dry and season generously with salt and pepper.
  3. In a bowl, mix minced garlic with rosemary and thyme; rub this mixture evenly over the roast.
  4. Heat oil in a skillet over medium-high heat; sear each side of the roast for about 3-4 minutes until browned.
  5. Place the seared roast in a roasting pan, scatter onions around it, and pour in beef broth halfway up the sides of the meat.
  6. Preheat oven to 325°F (160°C) and roast until the internal temperature reaches 135°F (57°C) for medium-rare (about 1.5 to 2 hours).
