  • 4 large bell peppers (any color)
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  3. In a skillet, heat olive oil over medium heat; sauté onion and garlic until soft.
  4. In a bowl, mix cooked rice, ground meat, sautéed onion and garlic, tomato sauce, Italian seasoning, salt, and pepper.
  5. Stuff each pepper generously with the filling.
  6. Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
