- 1 cup pineapple chunks (fresh or canned)

- 1 teaspoon curry powder
- 2 green onions, chopped
- 1 tablespoon vegetable oil
- 1/4 cup cashews or peanuts, toasted
Instructions
- Rinse jasmine rice under cold water until clear; cook as per package instructions using day-old rice.
- In a large skillet over medium-high heat, heat oil and sautΓ© bell peppers and peas for about 3-4 minutes.
- Add pineapple chunks and stir-fry briefly. Push to one side and scramble in the eggs until fully cooked.
- Incorporate the rice with soy sauce and curry powder; mix well and cook for an additional 5 minutes.
- Remove from heat and fold in green onions and nuts if desired. Serve hot.
