Instructions
- Preheat oven to 400°F (200°C).
- Wash and place sweet potatoes on a foil-lined baking sheet. Bake for 45-60 minutes until tender.

- Mix the sweet potato flesh with butter, brown sugar, cinnamon, sour cream, salt, and pepper until smooth.
- Spoon the filling back into the potato skins and place them on the baking sheet.
- Bake again at 350°F (175°C) for 15-20 minutes until heated through.
