Instructions

- Thinly slice the russet potatoes into rounds (about 1/8 inch thick).

- Coat the potato slices in the mixture and layer them in the muffin cups, sprinkling remaining cheese between layers.
- Bake for 35-40 minutes until golden brown and crispy. Let cool slightly before serving.
