  • 1 cup quinoa
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers (any color), diced
  • 1/2 medium red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. Combine quinoa with 2 cups of water in a saucepan. Bring to a boil, then reduce heat and simmer for about 15 minutes until water is absorbed. Fluff with a fork and let cool.
  2. While the quinoa cooks, chop the cucumber, bell peppers, cherry tomatoes, and red onion. Chop parsley as well.
  3. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  4. In a large bowl, combine cooled quinoa and chopped veggies. Drizzle dressing over the mixture and toss gently until everything is evenly coated.
  5. Taste and adjust seasoning if needed before serving chilled or at room temperature.
