Ingredients
- 1 cup quinoa
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved

Instructions
- Rinse the quinoa under cold water. Combine quinoa with 2 cups of water in a saucepan. Bring to a boil, then reduce heat and simmer for about 15 minutes until water is absorbed. Fluff with a fork and let cool.
- While the quinoa cooks, chop the cucumber, bell peppers, cherry tomatoes, and red onion. Chop parsley as well.
- In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
- In a large bowl, combine cooled quinoa and chopped veggies. Drizzle dressing over the mixture and toss gently until everything is evenly coated.
