  • 3 lbs bone-in beef chuck roast
  • 4 dried guajillo chilies, rehydrated
  • 1 cup fresh cilantro, chopped
  • 2 medium sweet onions, diced
  • 6 garlic cloves, minced
  • 4 ripe tomatoes, diced
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the beef chuck roast and cut into large chunks. Season generously with salt and pepper.
  2. Soak the guajillo chilies in hot water for 15 minutes until soft.
  3. In a large pot, sauté chopped onions and minced garlic over medium heat until golden brown.
  4. Blend soaked chilies with diced tomatoes, cumin, oregano, and some sautéed onions until smooth.
  5. Return remaining sautéed aromatics to the pot, add beef chunks and enough water to cover everything. Bring to a boil then reduce heat to simmer.
  6. Cover and simmer on low heat for about 3 hours or until meat is fork-tender.
