Ingredients
- 1 lb boneless chicken thighs, diced
- 8 oz andouille sausage, sliced

- 3 cups low-sodium chicken broth
- 2 tbsp Cajun seasoning

Instructions

- In the same pot, cook onions and bell peppers until softened (about 5 minutes). Add garlic and sauté for another minute.
- Return meats to the pot along with rice. Stir to combine.
- Pour in chicken broth and add Cajun seasoning; bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
- Let sit covered for an additional 5 minutes before fluffing with a fork. Garnish with fresh parsley before serving.
