Instructions

  1. Wash and dice sweet potatoes into small cubes; chop the bell pepper and onion.
  2. Heat olive oil in a large skillet over medium heat. Add sweet potatoes and cook for 10–12 minutes until golden brown.
  3. Stir in the chopped veggies and cook for an additional 5 minutes until onions are translucent.
  4. Add minced garlic and spinach or kale, cooking until wilted (about 1-2 minutes).
  5. Sprinkle with salt, pepper, and paprika; mix well.
  6. Cook eggs to your liking and serve on top of the hash.
