Ingredients
- 3 cups boneless, skinless chicken breasts (cubed)
- 1 cup long-grain rice
- 2 cups shredded sharp cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 cups frozen mixed vegetables
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C) and lightly spray a 9×13 inch baking dish with nonstick cooking spray.
- In a large bowl, combine uncooked rice, cubed chicken, cream of chicken soup, chicken broth, frozen vegetables, onion powder, garlic powder, salt, and pepper. Mix well.
- Layer half of the mixture into the baking dish and sprinkle with half of the cheddar cheese. Add the remaining mixture on top and finish with the remaining cheese.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden brown and bubbly.
- Let rest for 10 minutes before serving.
