  • 1 cup cooked quinoa
  • 1 cup diced bell peppers (any color)
  • 1/2 cup finely chopped onion
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 cup breadcrumbs
  • 1 large egg or flax egg (3 tbsp flaxseed meal + 9 tbsp water)

Instructions

  1. In a large bowl, mash black beans until chunky.
  2. Stir in cooked quinoa, diced bell peppers, chopped onion, and spices (cumin, chili powder, garlic powder).
  3. Add breadcrumbs and an egg or flax egg to bind the mixture together.
  4. Form mixture into patties about half an inch thick.
  5. Heat olive oil in a skillet over medium heat and cook each patty for about 5 minutes on each side until golden brown.
  6. Serve on buns with desired toppings.
