Ingredients

Scale
  • 1 cup quinoa
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/4 cup fresh parsley (chopped)
  • Juice of 1 large lemon
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup feta cheese (crumbled)
