  • 2 cups shredded rotisserie chicken
  • 1 cup red enchilada sauce (store-bought or homemade)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1/2 cup sour cream (for topping)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. In a large bowl, mix the shredded chicken with half of the enchilada sauce and half of the cheese blend.
