- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 8 oz wide egg noodles
- 10.5 oz cream of chicken soup
- 1 cup low-sodium chicken broth
- 1 cup frozen mixed vegetables
- 1 cup shredded sharp cheddar cheese
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and lightly spray a large baking dish with cooking oil.
- Cook egg noodles in boiling salted water until al dente (6-8 minutes). Drain and set aside.
- In a skillet over medium heat, sauté diced chicken for about 5-7 minutes until golden brown.
- In a large bowl, combine cooked noodles, sautéed chicken, cream of chicken soup, broth, mixed vegetables, half of the cheese, onion powder, garlic powder, salt, and pepper. Mix well.
- Transfer to the prepared baking dish and top with remaining cheese. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden brown.
- Let sit for 5 minutes before serving hot.
