  • 1 tbsp fresh parsley (or 1 tsp dried)

Instructions

  1. Shred the rotisserie chicken using two forks and set aside.
  2. Dice the carrots, celery, and onion into bite-sized pieces.
  3. In a large pot, heat 2 tbsp olive oil over medium heat; add onions and sauté until translucent (about 5 minutes). Add garlic and sauté for an additional minute.
  4. Stir in the carrots and celery along with the shredded chicken.
  5. Pour in the chicken broth until everything is covered. Bring to a boil.
  6. Add thyme and parsley; squeeze in lemon juice. Taste and adjust seasoning.
  7. Reduce heat and let simmer for 20-30 minutes until vegetables are tender.
