Ingredients

Scale
  • 1 lb lean ground beef
  • 1/2 cup panko breadcrumbs
  • 1/4 cup fresh parsley (chopped)
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • 1 cup carrots (diced)
  • 1 cup celery (diced)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, panko breadcrumbs, finely chopped onion, minced garlic, nutmeg, allspice, salt, and pepper. Mix until well blended.
  2. Form the mixture into bite-sized meatballs (about 1 inch in diameter).
  3. Heat olive oil in a large pot over medium heat; sauté meatballs until golden brown on all sides (8-10 minutes). Remove and set aside.
  4. In the same pot, add chopped celery and carrots; sauté for about 5 minutes until softened.
