  • 1 cup dried butter beans (or 2 cans, drained and rinsed)
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 1 tsp fresh thyme (or rosemary)
  • Salt & pepper to taste

Instructions

  1. If using dried butter beans, soak them overnight in water. For canned beans, drain and rinse.
  2. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent (about 5 minutes). Stir in minced garlic until fragrant.
  3. Add the soaked (or canned) butter beans and vegetable broth to the pot. Bring to a gentle simmer.
  4. Season with salt, pepper, and herbs. Simmer uncovered for 20–30 minutes if using dried beans or 10–15 minutes if using canned beans.
  5. Taste and adjust seasoning as needed before serving hot with crusty bread or over rice.
