Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup orzo pasta
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 4 cloves garlic (minced)
  • ½ cup grated Parmesan cheese
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil
  • Salt and pepper (to taste)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken breasts seasoned with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes.
  2. Stir in minced garlic when the chicken is nearly done; cook for about 30 seconds until fragrant.
  3. Add orzo and chicken broth; stir well. Bring to a boil, then reduce heat and simmer until orzo is al dente (10-12 minutes).
  4. Once most liquid is absorbed, stir in heavy cream and fresh spinach until the spinach wilts.
  5. Remove from heat; mix in grated Parmesan cheese and lemon juice until melted and well combined. Serve warm.
