- 1 cup orzo pasta
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 4 cloves garlic (minced)
- ½ cup grated Parmesan cheese
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp olive oil
- Salt and pepper (to taste)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced chicken breasts seasoned with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes.
- Stir in minced garlic when the chicken is nearly done; cook for about 30 seconds until fragrant.
- Add orzo and chicken broth; stir well. Bring to a boil, then reduce heat and simmer until orzo is al dente (10-12 minutes).
- Once most liquid is absorbed, stir in heavy cream and fresh spinach until the spinach wilts.
- Remove from heat; mix in grated Parmesan cheese and lemon juice until melted and well combined. Serve warm.
