  • 1 cup plain breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill or parsley, chopped
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Flake the drained salmon in a bowl using a fork.
  2. In a skillet over medium heat, sauté chopped onions in olive oil until translucent (about 3-5 minutes). Add minced garlic during the last minute.
  3. In the bowl with flaked salmon, mix in sautéed onions and garlic, breadcrumbs, beaten eggs, lemon juice, herbs, salt, and pepper until combined.
  4. Form mixture into patties about 1 inch thick and place on a plate.
  5. Heat oil in a skillet over medium-high heat. Cook each patty for 4-5 minutes on each side until golden brown.
  6. Transfer cooked patties to paper towels to absorb excess oil before serving.
