Description

Ingredients

  • 2 cups heavy cream
  • 5 large egg yolks
  • 1/2 cup granulated sugar (plus extra for topping)
  • 1 tsp vanilla extract (or 1 vanilla bean)
  • Pinch of salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, heat heavy cream and vanilla until steaming (do not boil).
  3. In a bowl, whisk egg yolks and granulated sugar until pale and fluffy.
  4. Gradually add warm cream to the egg mixture while whisking to prevent curdling. Strain through a fine sieve for smoothness.
  5. Pour the mixture into ramekins, filling them three-quarters full, and place in a baking dish filled with hot water halfway up the sides.
  6. Bake for 40-45 minutes until set but slightly jiggly in the center. Chill for at least two hours.
  7. Before serving, sprinkle superfine sugar on top and caramelize with a torch or broiler until bubbly and golden brown.
