  • 1 cup jasmine rice
  • ½ cup mayonnaise
  • 2 tbsp sriracha sauce (adjust to taste)
  • 2 green onions (chopped)
  • 1 cup bell peppers (sliced)
  • 1 cup cucumber (sliced)
  • Fresh cilantro (optional)

Instructions

  1. Rinse the jasmine rice under cold water until clear. Combine with 2 cups of water in a pot, bring to a boil, reduce heat, cover, and simmer for 15 minutes.
  2. Season salmon fillets with salt and pepper. In a non-stick pan over medium heat, cook skin-side down for 5-7 minutes until crispy; flip and cook an additional 3-4 minutes until opaque.
  3. In a bowl, mix mayonnaise and sriracha to create the bang bang sauce. Adjust spice level to preference.
  4. Fluff cooked rice and divide into bowls. Top with flaked salmon, arrange sliced bell peppers and cucumbers around the fish, then drizzle with bang bang sauce.
