- 1 cup granulated sugar, divided
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg
- 4 cups fresh cherries (or 2 cans cherry pie filling)
- 1 tbsp lemon juice
- 2 tbsp cornstarch
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, whisk together flour, 3/4 cup sugar, baking powder, and salt. Cut in cold butter until crumbly.
- Beat the egg separately and mix into the flour mixture until just combined.
- Reserve one cup of dough for topping; press the remaining dough into the prepared baking dish.
- In another bowl, combine cherries (or pie filling), lemon juice, remaining sugar, and cornstarch. Mix well.
- Spread cherry mixture over crust; crumble reserved dough on top.
- Bake for 35-40 minutes or until golden brown and bubbly. Cool before slicing.
