  • 1 cup granulated sugar, divided
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 4 cups fresh cherries (or 2 cans cherry pie filling)
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, whisk together flour, 3/4 cup sugar, baking powder, and salt. Cut in cold butter until crumbly.
  3. Beat the egg separately and mix into the flour mixture until just combined.
  4. Reserve one cup of dough for topping; press the remaining dough into the prepared baking dish.
  5. In another bowl, combine cherries (or pie filling), lemon juice, remaining sugar, and cornstarch. Mix well.
  6. Spread cherry mixture over crust; crumble reserved dough on top.
  7. Bake for 35-40 minutes or until golden brown and bubbly. Cool before slicing.
