Ingredients
- 3–4 boneless, skinless chicken breasts
- 9 no-boil lasagna noodles
- 15 oz whole milk ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach
- 2 cups marinara sauce
- 1 tsp garlic powder
- 1 tsp dried Italian herbs (basil, oregano, thyme)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a large baking dish.
- In a skillet over medium heat, sauté diced chicken breasts until golden brown and cooked through. Season with salt, pepper, and garlic powder.
- In a bowl, mix ricotta cheese with half of the grated Parmesan, dried herbs, salt, and pepper until smooth.
- Spread marinara sauce on the bottom of the baking dish. Layer noodles, half of the chicken mixture, half of the ricotta mixture, more noodles, remaining chicken mixture, spinach leaves, remaining ricotta mixture, and finish with noodles topped with marinara sauce and mozzarella cheese.
- Cover with foil and bake for 25 minutes; then remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
