Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs), sliced into strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 2 medium carrots, thinly sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 inch piece ginger, grated
  • ¼ cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp honey
  • 1 tbsp rice vinegar

Instructions

  1. Prepare all vegetables by washing and slicing them into bite-sized pieces. Slice the chicken against the grain for tenderness.
  2. In a bowl, whisk together soy sauce, sesame oil, cornstarch, honey, and rice vinegar. Add the chicken strips to the marinade and let sit while prepping other ingredients.
  3. Heat a large wok or skillet over high heat until smoking slightly. Add a tablespoon of canola or vegetable oil.
  4. Add marinated chicken in a single layer; cook for about 5 minutes until golden brown, flipping halfway through.
  5. Stir in onions followed by bell peppers and carrots; stir-fry for about 3-4 minutes until just tender but crisp.
  6. Add minced garlic and grated ginger; cook for an additional 30 seconds until fragrant.
  7. Pour remaining marinade over the stir-fry mixture; let bubble for about 2 minutes until thickened slightly.
  8. Serve hot over jasmine rice or noodles.
