  • 1 tbsp fresh ginger, grated
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp tomato paste (unsweetened)
  • 2 tbsp curry powder
  • 2 cups fresh baby spinach (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the onion, garlic, and ginger.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add garlic and ginger; cook until fragrant.
  3. Stir in the chickpeas, curry powder, and tomato paste; cook for another 3-4 minutes.
  4. Pour in the coconut milk; bring to a simmer and cook for about 10 minutes until thickened.
