Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round baking pans.

- For the frosting, beat softened butter until creamy. Gradually add powdered sugar and vanilla extract while mixing on low speed. Fold in remaining shredded coconut.
- Frost the cooled layers and top with extra shredded coconut.
