  • 1 cup coconut milk
  • 3 large eggs (room temperature)
  • 1 cup sweetened shredded coconut (divided)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a mixing bowl, combine the cake mix, coconut milk, eggs, and half of the shredded coconut. Mix until smooth.
  3. Divide the batter between the prepared pans and bake for 25-30 minutes or until golden brown.
  4. Let cakes cool in pans for 10 minutes before transferring to wire racks.
  5. For the frosting, beat softened butter until creamy. Gradually add powdered sugar and vanilla extract while mixing on low speed. Fold in remaining shredded coconut.
  6. Frost the cooled layers and top with extra shredded coconut.
