  • 8 oz thinly sliced ribeye steak
  • 4 oz provolone cheese, sliced
  • 1 cup bell peppers, sliced (assorted colors)
  • 1 medium onion, sliced
  • 4 large flour tortillas
  • 2 tbsp olive oil

Instructions

  1. Gather all ingredients. Thinly slice the ribeye steak against the grain. Chop bell peppers and onion into strips.
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil. Sauté onions until softened (about 3 minutes), then add bell peppers and cook for another 5 minutes until tender.
  3. Push vegetables to one side of the skillet and add remaining olive oil if needed. Cook ribeye slices seasoned with salt and pepper until browned but juicy (about 3-4 minutes).
  4. Lay out tortillas and fill each with a portion of steak, veggies, and provolone cheese in the center.
  5. Fold in one side of the tortilla over the filling and roll tightly from bottom to top. Heat a grill pan over medium heat, lightly coat with oil, and grill each wrap seam-side down for about 2 minutes per side until golden brown.
  6. Serve hot, sliced diagonally for presentation.
