  • 3 lbs chuck roast
  • 4 dried guajillo chiles, de-seeded
  • 1 cup chopped onion (about 1 medium onion)
  • 4 garlic cloves
  • Juice of 2 limes
  • 2 cups low-sodium beef broth
  • 1 tsp cumin powder
  • 1 tsp Mexican oregano
  • ½ tsp black pepper
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse and de-seed the guajillo chiles; cut off stems.
  2. Blend soaked chiles with onion, garlic, cumin powder, oregano, lime juice, salt, and beef broth until smooth.
  3. Heat oil in a pan and sear the chuck roast on all sides until browned.
  4. Place seared meat in the crockpot and pour the blended sauce over it. Add additional broth if needed.
  5. Cook on low for 8 hours or high for 4 hours until tender.
  6. Shred the meat with forks and mix back into the sauce before serving.
