  • 5 dried guajillo peppers

  • 4 cloves garlic
  • 2 cups low-sodium beef broth

  • 1/4 cup lime juice (freshly squeezed)
  • 2 tsp cumin
  • 2 tsp dried oregano
  • 1 tsp salt (adjust to taste)
  • 1 tbsp whole black peppercorns
  • 2 bay leaves

Instructions

  1. Gather all ingredients and chop the onion and garlic finely.
  2. Soak guajillo peppers in hot water for about 15 minutes until softened.

  4. Sear the chuck roast in a skillet over medium-high heat for 4-5 minutes on each side until browned.
