  • 8 oz wide rice noodles
  • 1 cup bell peppers (sliced)
  • 1 cup broccoli florets
  • 1 cup carrots (sliced)
  • 1 cup protein (chicken, shrimp, or tofu)
  • 3 cloves garlic (minced)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp coconut sugar
  • 1 tbsp Sriracha sauce (adjust to taste)
  • Juice of 1 lime
  • ½ cup fresh basil leaves
  • 2 tbsp cooking oil

Instructions

  1. Prep all ingredients by chopping vegetables and mincing garlic.
  2. Boil a large pot of water and cook the rice noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet or wok over medium-high heat, add cooking oil and sauté your chosen protein until golden brown; remove from pan.
  4. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  5. Toss in bell peppers, broccoli, and carrots; stir-fry for about 3-4 minutes until crisp yet vibrant.
  6. Return cooked noodles and protein to the skillet; add soy sauce, oyster sauce, coconut sugar, Sriracha, and lime juice. Toss everything together until evenly coated.
  7. Finish with fresh basil leaves just before serving.
