  • Salt & pepper to taste

Instructions

  1. 1. Cook the potatoes in salted boiling water until fork-tender (about 15-20 minutes). Drain and set aside.
  2. 2. In a skillet over medium heat, cook the diced bacon until crispy. Drain excess fat but keep some drippings.
  3. 3. Add the chopped red onion to the skillet and sauté until translucent (about 3-4 minutes).
  4. 4. In a bowl, whisk together apple cider vinegar, Dijon mustard, salt, and pepper.
  5. 5. Combine cooked potatoes with the bacon-onion mixture in a large bowl. Pour dressing over and toss gently to coat.
  6. 6. Finish by adding freshly chopped parsley before serving warm or at room temperature.
