Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lb)
  • 2 cups diced fresh carrots
  • 2 cups diced celery stalks
  • 1 medium onion, diced
  • 34 garlic cloves, minced
  • 8 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 3 cups wide egg noodles
  • Salt and pepper to taste
  • Fresh parsley (optional for garnish)

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until softened.
  2. Add minced garlic and cook until fragrant, about 1 minute. Add chicken breasts and brown slightly on both sides.
  3. Pour in the chicken broth, scraping any bits from the bottom. Add thyme, bay leaf, salt, and pepper.
  4. Bring to a gentle boil, then reduce heat to low and simmer for about 20 minutes until chicken is cooked through.
  5. Remove chicken breasts, shred them with two forks, and return them to the pot.
  6. Stir in egg noodles and cook until tender, about 7-10 minutes.
  7. Discard the bay leaf, ladle into bowls, garnish with parsley if desired, and enjoy!
