  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp olive oil
  • Freshly cracked black pepper to taste

Instructions

  1. Rinse the rice under cold water until clear; pat chicken breasts dry.
  2. Set your Instant Pot to 'Sauté.' Add olive oil, then sauté onions and garlic until fragrant (2-3 minutes).
  3. Place chicken breasts in the pot, sprinkle with paprika, thyme, salt, and pepper. Sear each side for 3-4 minutes.
  4. Pour in chicken broth to deglaze the pot; stir in rinsed rice gently.
  5. Close the lid and set on 'Manual' for 10 minutes at high pressure. Allow natural release for 5 minutes before quick releasing the rest of the steam.
