  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil or butter
  • 1/3 cup unsweetened coconut flakes
  • 1/4 cup chopped nuts (pecans or walnuts) and/or 1/4 cup dried fruit (raisins or cranberries)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or nonstick spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, mix the grated carrots, applesauce, eggs (if using), and melted oil/butter until well combined.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined. Do not overmix.
  5. Add in coconut flakes and any optional nuts or dried fruit; fold gently.
  6. Spoon the batter into muffin cups until about three-quarters full. Optionally sprinkle oats on top.
  7. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
  8. Cool in the pan for five minutes before transferring to a wire rack.
