  • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh baby spinach
  • 2 cups marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook jumbo pasta shells in salted boiling water until al dente. Drain and set aside.
  2. In a bowl, mix ricotta, mozzarella, spinach, half of the Parmesan, Italian seasoning, salt, and pepper until creamy.
  3. Preheat oven to 375°F (190°C). Fill each shell with the ricotta mixture.
  4. Spread half of the marinara sauce in a baking dish. Place stuffed shells seam-side up and pour remaining sauce over them.
  5. Sprinkle with remaining Parmesan and additional mozzarella if desired.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly.
