Description

  • 1 cup roasted red peppers (jarred)
  • 1/4 cup tahini
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp cumin powder
  • Salt and pepper to taste

Instructions

  1. In a food processor, combine the chickpeas and roasted red peppers until well-mixed.
  2. Add tahini, minced garlic, lemon juice, cumin, salt, and pepper. Blend until smooth.
  3. With the processor running, slowly drizzle in the olive oil until creamy.
  4. Taste and adjust seasoning as necessary.
  5. Transfer to a bowl, garnish with olive oil and paprika if desired, and serve with pita chips or veggies.
