  • 1 cup fresh pineapple chunks
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 3 tbsp brown sugar
  • ¼ cup ketchup
  • 1 tbsp cornstarch mixed with 2 tbsp cold water

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat until shimmering. Add chicken in batches, cooking until golden brown (about 5-7 minutes). Remove from the skillet and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds. Add bell peppers and pineapple; stir until softened.
  4. Return chicken to the skillet and pour in the sauce mixture. Stir well and cook for an additional 3-5 minutes until heated through.
