  • 3 cloves garlic, minced
  • ½ cup sour cream or Greek yogurt (for serving)
  • Fresh cilantro (optional)

Instructions

  1. Cook the rotini pasta in boiling salted water until al dente (8-10 minutes). Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onion and bell peppers until tender (about 5 minutes).
  3. Add ground beef or turkey to the skillet; cook until browned (6-8 minutes). Stir in taco seasoning.
  4. Mix in canned diced tomatoes and cooked pasta until well combined.
  5. Sprinkle shredded cheddar cheese on top and let it melt (about 2 minutes on low heat).
